Over the past decade, Baltimore restaurateurs have upped their design game. But the new Gunther & Co. in Canton isn’t the same Edison-bulb-meets-old-wood rehash so often seen at every swanky restaurant, but a contemporary take on an old brewery’s boiler room. Modern metal and gray tones with glass and tile make the bar a sleek yin to the yang of the original brick walls and steel beams, while the dining room opens up into a 30-foot-tall, light-soaked showcase of hot-damns. There’s the long marble bar that looks into the open kitchen, the lofty bright green living wall that looks out over the dining room, and a patio that features an herb wall and Gunther Brewing Company’s original brick horse stable wall. It impresses the eyes before you even have your first bite.
