Soul food has its roots in slavery, when African-Americans were only given undesirable or leftover cuts of meat and vegetables and they learned how to make inventive, delicious meals with them—which makes us side-eye the fact that a white dude, Bryan Voltaggio, is serving bougie takes on soul food at Family Meal. We can’t deny that his fried chicken is good, though: It’s brined in a spicy chicken stock, double-dredged in cornmeal and spices, and fried in canola oil, then served with two buttermilk biscuits and house-made hot sauce. Just try not to think too much about the appropriation happening as you chomp down on the chicken.
