After leaving the Saturday Waverly Farmers Market two years ago, Gunpowder Bison is selling well among the loud and lively Baltimore Farmers Market on Sundays under the JFX—bison cuts and special packages can be purchased on its website and at their company store in Monkton Wednesday through the weekend. While buying Gunpowder Bison may not be as easy as hitting up the neighborhood grocery store, its pasture-raised, hormone- and antibiotic-free, dry-aged bison is the best bison we’ve tried. High in minerals, vitamins, and protein but low in fat (which means, whether ground or steak, the meat must be cooked carefully so it doesn’t overcook or god forbid burn), bison is a deep red beef alternative that, while gaining interest, has never truly caught on. We dig the sausages and hot dogs, and love making burgers out of the lean ground meat and hope Gunpowder Bison continues for as long as their buffalo-brothers roamed.
