Having stopped its full dinner service last year, Artifact Coffee took the change as an opportunity to host a multitude of collaborations and pop-up events throughout the year—something that’s seen Spike Gjerde and Co. working hand-in-hand with other local and regional chefs and bartenders and their staffs to much success. Past events have included a ramen pop-up with D.C.’s Toki Underground that saw lines wrapped around the building, an Aggio “preview” weekend with Bryan Voltaggio and his elegantly rustic Italian eats, a dinner with produce foraged from the Eastern Shore, and two Korean-themed collaborations with Chef Jonah Kim and his staff of the (sadly) now-closed Pabu. The latter of which were held, in part, to support Pabu’s staff after a major water-main break led to weeks of being shut down—something not seen often enough in the competitive world that is the restaurant industry.
