Welcome back to Friendsgiving. By now, your guests have caught a pretty strong buzz and you should probably start offering them some food. As a self-appointed Basic Bitch, I know exactly what my equally basic friends want to eat. I have yet to befriend a human who doesn't stop what they're doing and gorge the moment a tub of Sabra hummus is set before them.
This year, I'm elevating everyone's favorite Mediterranean dip with the seasonally appropriate sweet potato and a smoky kick from canned chipotles in adobo.
Spiced Sweet Potato Hummus
4 cans chickpeas, rinsed and drained, 1 cup liquid reserved
Sweet potatoes, 2 lbs, peeled, cubed, and steamed
Cumin, 1 tbs
Maple syrup, 3 tbs
Olive oil, 1/4 cup
Juice of 1 lime
Chipotle in adobo, 2-3 depending on heat preference
Salt, 1 tbs
Combine all ingredients in the bowl of a large food processor. Process for one minute.
Scrape sides of processor and process for another minute. Repeat this process until hummus has reached your desired consistency.
