Some of us here have the kind of sensitive stomachs typically associated with, well, aging. And espresso, served so often in harsh doses, hurts us bad. If you wander into this Highlandtown used-book store/coffeehouse, Brett, the coffee guy (as he prefers to be called), might not let you walk out of High Grounds without trying his Viennese-style espresso. OK, Brett, OK. And guess what? Espresso can be full-bodied and mellow and gorgeous and not lodge for hours in your heart. Brett will gladly show off his Diedrich drum-roaster, which unlike roasters that use the hot-air method, treats the beans gently, tenderly. Brett found his connection to this roaster, along with his hard-core roasting education, in Orange County, Calif., where the Diedrich family had relocated after having first moved from Germany to Guatemala, where they learned everything they could about beans. So says Brett anyway. But even if Brett learned how to roast beans from an online course, he's a master at it in our books, and he fires up the only shot of espresso we feel perfectly safe pouring down our gullet.
