There’s a reason why the lines for Blacksauce Kitchen at the Waverly Farmers Market and the Baltimore Farmers Market are always so damn long. Damian Mosley and Vesnier Lugo, the team behind this mobile food business, serve different gourmet biscuit sandwiches every week, with offerings ranging from braised chicken with smoked apricot jam, to roasted peaches with cave-aged cheddar and arugula, to braised lamb with charred spring onions. The sandwich combinations are always drool-worthy, but the house-made biscuits themselves nail that sweet spot of being equally buttery, fluffy, and crumbly—and there are frequently seasonal varietals, such as apricot biscuits in summer or chipotle bacon ones in winter. All of it makes that line at the farmers market worth it.
